This Lemon Drizzle cake is perfect for the long weekend. Minimal ingredients and preparation time make for a very tasty treat.

INGREDIENTS

 

  • 275g Self Raising Flour

  • 225g Caster Sugar

  • 225g Butter Soft

  • 4 eggs

  • 2 lemons Zest

  • 4 tbsp Milk 

  • 2 tbsp Baking Powder

  • 175 grams granulated sugar

  • 2 Lemons Juice

DIRECTIONS

 

  1. Pre-Heat the oven to 170⁰C/150⁰C (Fan) /Gas 3

  2. Grease a baking tin and then line with grease proof paper

  3. Mix all the ingredients ( except the granulated sugar and lemon juice) into a large bowl and beat well for about two minutes until well blended. 

  4. Bake in the middle of a pre-heated oven for about 35-40 minutes or until the cake springs back when pressed lightly. 

  5. Allow the cake to cool for a few minutes in the tin. 

  6. Mix the lemon juice and granulated sugar in a small bowl to give a runny consistency.

  7. Spoon this mixture evenly over the cake whilst it is still warm

  8. Cut into squares when cool.
