This Lemon Drizzle cake is perfect for the long weekend. Minimal ingredients and preparation time make for a very tasty treat.
275g Self Raising Flour
225g Caster Sugar
225g Butter Soft
4 eggs
2 lemons Zest
4 tbsp Milk
2 tbsp Baking Powder
175 grams granulated sugar
2 Lemons Juice
Pre-Heat the oven to 170⁰C/150⁰C (Fan) /Gas 3
Grease a baking tin and then line with grease proof paper
Mix all the ingredients ( except the granulated sugar and lemon juice) into a large bowl and beat well for about two minutes until well blended.
Bake in the middle of a pre-heated oven for about 35-40 minutes or until the cake springs back when pressed lightly.
Allow the cake to cool for a few minutes in the tin.
Mix the lemon juice and granulated sugar in a small bowl to give a runny consistency.
Spoon this mixture evenly over the cake whilst it is still warm
Cut into squares when cool.
